Grilled deodeok root
더덕구이
A grilled root dish with a distinctive aroma and chewy texture. A good way to explore one of Jinan’s traditional local ingredients.
Typical ingredients
Deodeok root, a red-pepper seasoning and a little oil are a common starting point. The root has a fibrous, pleasantly chewy bite; sauces vary by kitchen.
How to order
Ask whether the deodeok is a side dish or a full meal set. Check how many portions are included before adding rice.
How to enjoy it
Take small pieces with rice; the earthy aroma is part of the dish. Try one piece before adding extra sauce.
Before ordering: Red-pepper seasoning can be spicy. Ask about fish sauce or other seafood seasoning rather than assuming the dish is vegan.
Say it in Korean:
더덕구이 일 인분 주세요.
One serving of grilled deodeok, please.
County-listed phone: 063-433-5588
The county lists grilled deodeok and shiitake mushroom soup.

Black pork barbecue
흑돼지 삼겹살·목살
Pork belly and neck cuts are a classic Jinan meal. Look for the cut and serving size on the menu when ordering for your group.
Typical ingredients
Black-pork belly (samgyeopsal) or neck (moksal), lettuce, dipping sauces and side dishes. “Black pork” identifies the pig type, not a dark sauce.
How to order
Choose the cut, then confirm the gram weight and minimum number of servings. Rice, noodles and some side dishes may be charged separately.
How to enjoy it
Cook the pork thoroughly on the grill. Make a small lettuce wrap with pork and a little ssamjang; use clean serving tongs for cooked pieces.
Before ordering: Pork is the main ingredient. Ssamjang commonly contains soy; marinades and side dishes can contain additional allergens.
Say it in Korean:
흑돼지 삼겹살 이 인분 주세요.
Two servings of black-pork belly, please.
County-listed phone: 063-433-0003
The county lists black pork belly, fresh neck cuts and other pork dishes.

Mountain-vegetable bibimbap
산채비빔밥
Rice mixed with mountain greens and seasoned vegetables. This is a convenient meal to pair with the southern approach to Maisan.
Typical ingredients
Rice with mountain greens and seasoned vegetables; gochujang is commonly mixed in. Egg, sesame oil and other toppings depend on the kitchen.
How to order
Ask for the sauce separately if you want to control the heat. A vegetable-looking bowl is not automatically vegetarian or vegan.
How to enjoy it
Start with a small amount of gochujang, mix the rice and vegetables, then add more to taste. Pair it with the soup and side dishes that arrive.
Before ordering: Ask about egg, meat, seafood stock and sesame if they matter to your diet.
Say it in Korean:
산채비빔밥 하나 주세요. 고추장은 따로 주세요.
One mountain-vegetable bibimbap, please. Sauce on the side.
County-listed phone: 063-432-8840
The county lists mountain-vegetable bibimbap and black pork ribs.

Spicy mandarin-fish stew
쏘가리 매운탕
A freshwater-fish stew centred on ssogari, or mandarin fish. Confirm availability and the size of the shared pot with the restaurant.
Typical ingredients
Mandarin fish (ssogari) simmered with vegetables in a spicy broth. This is a specific fish dish rather than a name for every freshwater stew.
How to order
Check that ssogari is available today and ask which pot size suits your group. Confirm whether rice is included in the price.
How to enjoy it
Let the shared pot finish cooking, then ladle a small portion into your bowl. Separate the fish carefully and check for bones before eating.
Before ordering: Contains fish; stock and seasonings may include other seafood. Ask about the heat before ordering.
Say it in Korean:
쏘가리탕 있나요? 두 명이 먹을 수 있나요?
Do you have mandarin-fish stew? Is there a portion for two?
County-listed phone: 063-433-7804
The county lists ssogari stew, ppaga stew and mixed-fish stew.

Aejeo pork dish
애저
A traditional Jinan pork speciality. Ask about the current preparation, serving size and advance ordering when arranging a meal.
Typical ingredients
Aejeo is Jinan’s traditional young-pork specialty. The cut, broth, accompaniments and preparation are restaurant-specific; confirm what is being served.
How to order
Call before travelling especially for this dish. Ask whether advance ordering is needed and how many people one order serves.
How to enjoy it
Follow the restaurant’s serving advice. Start with a small piece of pork and a little of the supplied dip; enjoy the local side dishes alongside it.
Before ordering: This is a pork dish, not a vegetable stew. Ask about the exact preparation if you are unfamiliar with the specialty.
Say it in Korean:
애저요리 예약해야 하나요? 몇 명이 먹나요?
Does the aejeo dish need a reservation? How many people does it serve?
County-listed phone: 063-433-2629
The county identifies aejeo as this restaurant’s representative dish.

Spicy freshwater-fish stew
민물 매운탕
The broader freshwater-stew tradition includes different fish and mixed-fish pots. This taste is listed separately from ssogari in the traditional eight.
Typical ingredients
Freshwater fish or a mixed-fish selection with vegetables in a red-pepper broth. The fish used may differ from a ssogari-only pot.
How to order
The county lists ppaga stew and mixed-fish stew at Seombawi Garden. Ask which fish are available and compare pot sizes.
How to enjoy it
Share the cooked stew with separate bowls and rice. Move slowly through fish pieces because small bones may remain.
Before ordering: Contains fish and usually spicy seasoning. Do not assume a mixed-fish pot is boneless.
Say it in Korean:
빠가탕이나 잡탕 있나요? 맵기 조절되나요?
Do you have ppaga or mixed-fish stew? Can you adjust the heat?
County-listed phone: 063-433-7804
Try the ppaga or mixed-fish options listed by the county. This is the same restaurant as taste 04.

Eojuk fish porridge
어죽
A warm freshwater-fish porridge dish. The county’s listing makes Wolpyeongdaek a useful food stop to investigate around Jeongcheon.
Typical ingredients
A thick, warm fish-and-rice dish. The fish, grain texture, vegetables and seasonings vary; some versions are closer to a rich soup than a smooth porridge.
How to order
Ask what fish is used and whether the kitchen serves individual bowls or a shared pot. Check the seasoning and noodle additions if relevant.
How to enjoy it
Stir gently, let a spoonful cool and eat at an unhurried pace. Add extra seasoning only after tasting the broth.
Before ordering: Contains fish. Noodles or added seasonings may introduce wheat, soy or other allergens; ask the kitchen.
Say it in Korean:
어죽 하나 주세요. 어떤 생선이 들어가나요?
One eojuk, please. What fish is in it?

Sliced raw trout
송어회
Trout served as hoe is another of the traditional eight tastes. Check the current menu and portion size before your visit.
Typical ingredients
Thin slices of trout served raw, typically with vegetables and dipping sauces. Rice, extra stew and accompaniments depend on the order.
How to order
Confirm the portion size, what is included and whether cooked alternatives are available if you do not eat raw fish.
How to enjoy it
Take a small slice with the accompanying vegetables and a little sauce. Keep the cold serving as supplied; use the shared utensils for the platter.
Before ordering: This is raw fish and is not suitable for someone avoiding uncooked seafood. Check sauces and accompaniments for additional allergens.
Say it in Korean:
