Galbitang · 갈비탕

Galbitang with beef short ribs, radish, scallions and jujube in clear broth

All-season Korean food guide

Galbitang · 갈비탕

Galbitang is Korean beef short-rib soup, served with rice and side dishes. This clear-broth version highlights bone-in ribs, radish and scallions, with jujube as a house-style addition. It is a soup, distinct from the reduced, sauce-coated ribs of galbijjim.

Flavor & texture

The broth should taste gently beefy, with the sweetness of cooked radish and a fresh scallion finish. Tender meat offers a richer bite than the liquid surrounding it. Clear does not mean flavorless: look for a clean savory finish rather than a heavy layer of grease.

Nutrition context

The rib meat contributes protein and fat; the amount varies with the cut and trimming. Rice adds carbohydrate, and the broth contributes salt according to the recipe and table seasoning. A bowl with large bones does not necessarily contain more edible meat. Exact calories require a measured recipe and serving size.

How it is made

Ribs are commonly soaked, blanched and rinsed before a slow simmer with aromatics. Skimming and gentle cooking help keep the broth clear while the connective tissue softens. Radish absorbs the stock as it becomes tender. Some restaurants add glass noodles or egg garnish; jujube is not essential to every version.

Chili heat

Classic clear galbitang is generally mild and does not depend on chili. Black pepper, dipping sauce and spicy kimchi can be added separately. Check the menu for spicy variations rather than assuming every rib soup has the same seasoning.

Main ingredients

Galbitang ingredients: beef short ribs, clear beef broth, Korean radish, green onions, garlic and jujube

Ingredients and preparation vary by restaurant. Confirm allergens and dietary requirements when ordering.

How to enjoy it

Galbitang: Let a spoonful cool and taste the broth before adding salt or pepper. Season gradually, and keep dipping sauce separate so the broth retains its character.
